Stonegrass Soup
1-2 fistfuls stonegrass lichen
2 cups milk
1/2 tea spoon salt
2-3 table spoons brown or white sugar
Clean the lichen well and rinse in cold water. Bring the milk to a
boil and add lichen. Cook for 2-3 minutes. Add salt and sugar. Serve
warm.
Note: this is actually an icelandic recipe called Fjallagrasamjolk (Iceland Moss Soup), the lichen used is Cetraria islandica.
As stated earlier the foods found on this website are foods that were eaten
in medieval Europe. Europe is a large continent with different cultures
and climates. Not all the foods listed would be found everywhere in
Europe. These foods are primarily from Western Europe with a heavy
emphasis on the British. While meat, poultry and potherbs would stay
fairly consistent throughout the continent, fruits, nuts and spice
(herbs) would very from region to region.
